Wine and Cellar DoorOne of the first things you see when you arrive at Immerse is the vineyard. Our vines are now more than 20 years old and produce fruit of intense flavour and consistently high quality. Seasonal activities ensure there is always something happening among the vines and the cellar door windows deliver a picture postcard image of our Sauvignon Blanc vines. The four wines made under the Immerse label are Sauvignon Blanc, Chardonnay, Pinot Noir and Shiraz. These are exclusive to Immerse and are only avalibale to taste or purchase through our website & our cellar door. In developing the Estate style for our wines, the first consideration was to make wines that people will love to drink - that means fresh and vibrant with lively fruit character and enough structure to ensure they stand the test of time. Our second criteria is to create wines that go wonderfully well with food as eating and drinking is a high priority at Immerse.Cellar Door Wine Tasting and Bottle Sales. The latest addition to our Cellar Door is our 'Oscar's Reserve' wines which are a limited production of Chardonnay & Shiraz. They are selling fast and should be tasted to be truely appreciated & enjoyed! The ambiance is warm and welcoming and our staff are trained to ensure your wine tasting experience is fun, educational and rewarding. All of the Immerse wines are available to purchase at the cellar door or by ordering online. When visiting the Cellar Door you will also be able to have a look around our selection of produce some of which is exclusive to the Yarra Valley. Please see our wine tasting notes below: Bottle 6 pack* Case* Light elegant sparkling, made from Chardonnay (80%), Chenin Blanc (15%) & Colombard (5%) grapes. With intense bubbles in the mouth & a subtle sweetness on the finish, this wine is an easy drinking style or will age for around 2-3 years. A wonderful afternoon wine or aperitif. INTRODUCING…… The ideal summer wine, pale straw colour with youthful green hues. Typical cool climate grassy, herbal characters flow through to the palate which is full and flavoured with hints of asparagus. This wine finishes with a green apple freshness which is crisp & clean. 2006 Starkers Chardonnay $20.00 $16.50 $15.00 Post fermentation the wine spent 7 months in seasoned French oak barrels. Aromas of stone fruit, and citrus followed with hints of roasted nuts. With a clean, crisp finish this wine is well balanced and will enjoy now or for 4 years. Only 100 cases of this handcrafted wine will be released, light / pale gold in colour with an aroma of essences of tree fruits complemented by vanilla and cashew. The palate has a rich and complex mouth feel with flavours of white peach and limes and finishes with a structured lingering finish. This Pinot Noir is light to medium bodied and has aromas of red berries and cherries. With a medium grain texture that lingers with beautiful spicy notes. The finish exhibits fine tannins and beautiful length. 2005 Starkers Cabernet Merlot $20.00 $16.50 $15.00 A deep red colour with bright red hues this wine was blended to 65% Cabernet & 35% Merlot. It is a full bodied wine that combines gently with a soft, silky texture and lovely long tannins that linger on the finish. INTRODUCING….. A deep intensity of rich & juicy fruit together with fine grained tannins ensure this wine is full of flavour with a typical cool climate finish. A small portion of Viognier is supported by a smoky background of seasoned French oak. This wine lingers on the palate allowing you to enjoy the flavours.
